Mexican Style Fish

1 Corvina, or other white fish, filleted. (4 portions)
1 onion
1 jalepeno pepper, seeds removed, and sliced into rings (use only half if you prefer it to be less spicy.)
2 plum tomatoes
1/2 cup green olives, sliced
1/4 cup lime juice
salt
1/2 cup grated cheddar cheese

Preheat oven to 425 degrees. Saute onion in olive oil. Add jalepeno pepper and saute, add tomatoes and saute until wilted.
Remove from heat, add green olives, lime juice and salt to taste and mix. Place fillets in a single layer on a baking dish, spread vegetable mixture over fish. Sprinkle with cheddar cheese.

Bake on the top rack of the oven for about 20 minutes until fish flakes easily with a fork.
