Yeasted Banana Bread


1/2 c. warm water
2 T. yeast
5 c. whole spelt flour
3 c. white spelt flour
1 c. milk, soy milk, or water
1/4 c. canola oil
1/3-1/2 cup honey
1 tsp. nutmeg
2 tsp. salt
1 1/2 c. ripe mashed banana
1/2 c. chopped walnuts

Proof yeast in warm water. Combine flours, add remaining ingredients except nuts, mixing occasionally. Mix until a dough is formed, add the nuts. Knead the dough until it is smooth and elastic. The dough will be slightly sticky.
Cover and let rise until double, about 1 1/2 hours. Shape into loaves or braid. Allow to rise till doubled. 45 min. - 1 hour. (If desired, brush with beaten egg) Preheat oven to 350. Bake loaves for about half an hour until golden.
