Quinoa Salad

1 cup raw quinoa
1 large tomato
1 green onion
1/4 cup black olives
olive oil
lemon juice
salt and pepper

optional: feta cheese, coriander, parsley

Cook quinoa in 2 cups of water with a quarter teaspoon of salt. (bring to a boil, reduce heat and simmer for 15 min.) Let cool.
Chop tomato, slice green onion, and olives. Mix with quinoa (add fresh parsley or coriander and/or feta cheese if desired.) Season with olive oil, lemon juice, salt and pepper.

Serve at room temperature.
