Basic Potato Latkes

4 large potatoes (red ones)
1 onion
2 eggs
1/4 c. bread crumbs
1 tsp. salt
1/4 tsp. pepper
Olive oil for frying


Grate potatoes and onions.
Combine all ingredients except oil.
Put just enough oil in a large frying pan to coat the bottom.
Add spoonfuls of potato mixture to the pan and fry for about five minutes before flipping. Then continue cooking for another few minutes until done. Repeat with the remaining potato mixture. If necessary add oil to the pan between batches.
