Basic Tomato Sauce

Great for pasta, lasagna, pizza, and in recipes.

I make large batches of this sauce and freeze it in small containers. Then I just defrost it in the microwave as needed.


1 onion, chopped
3-4 cloves of garlic, crushed
2 cans of crushed tomatoes (800 grams each)
260 grams of tomato paste
1 T. dried basil
1 T. dried oregano
1 tsp. salt (to taste)
1/4 tsp. pepper (to taste)
1/2 tsp. chili pepper flakes (to taste), or a few drops of Tabasco sauce


Saute the onion in a little olive oil. When soft, add the garlic and saute for another minute. Add the rest of the ingredients and stir. Bring to a boil and simmer for 20 minutes, stirring occasionally.
