Homemade Applesauce

Small sweet red apples

Peel and core the apples. Put them in a pot with about 1/2 a cup of water and sprinkle cinnamon on top. Simmer on a low heat, covered, for about an hour. Stir occasionally. When it's done, the apples should be soft and falling apart.
Cool and blend with an immersion blender, or just mash them with a spoon depending on the consistency you like.
