Quinoa with Black Beans

1 onion, chopped
3 cloves garlic, minced
1 red pepper, chopped
1 T. olive oil
1.5 cups quinoa
1.5 cups cooked black beans (or canned)
1 cup frozen corn
1 tsp. cumin
1/8 teaspoon hot pepper flakes
salt and pepper to taste
3 cups water
fresh coriander, optional
chopped avocado, optional

Saute onion in olive oil in a pot. Add garlic and red pepper and saute. Add remaining ingredients except coriander and avocado. Cover and bring to a boil, reduce heat and simmer for about 20 min. until quinoa is cooked through.

Serve with coriander and avocado.
