Purple Cabbage, Apricot, and Pine Nut Salad

A vibrant, colorful salad, with a delicious mix of flavors.

4 cups purple cabbage, shredded
3/4 cup dried apricots, chopped
1/2 cup pine nuts
2 green onions, sliced

dressing:
1/4 cup balsamic vinegar
1/4 cup soy sauce
2 T. olive oil

Mix all ingredients together in a big bowl and serve.

The salad becomes soggy after about half an hour, so if you want to prepare it in advance, don't dress it until shortly before you serve it.

* I just approximate all the ingredients, so adjust things to your taste.
