Easy Spelt Olive Bread


Yields two loaves
Ingredients:

1 3/4 c. warm water
2 T. yeast
5 cups whole grain spelt flour
1/8 c. olive oil
1 cup green olives, sliced
1 T. salt

Combine yeast and warm water and let sit for 10 min. Add olive oil and olives to the yeast mixture and stir. Add the flour a cup at a time, mixing after each addition. Add salt. Knead dough until smooth and elastic. Place in a bowl, cover and let rise until doubled, about an hour. Punch down the dough and shape into two loaves. Either place in two greased loaf pans, or place free form on a baking paper lined cookie sheet. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350 fahrenheit.
Bake for half an hour until bread is brown and sounds hollow when tapped.
