Zucchini Quiche

pie crust dough (if you roll it thinly, 1/2 a recipe should be enough)
2 medium zucchini
2 eggs
1 cup grated kashkaval or white cheddar
250 grams cottage cheese
1/3 cup milk
1/2 tsp. salt
1/4 tsp. basil
1/4 tsp. oregano

2 T. parmesan

Preheat oven to 400 degrees. Roll out crust, place in a shallow nine inch pie plate. Prebake crust for 8 minutes. Lower oven temperature to 350.
Slice zucchini (leave unpeeled) and microwave in a covered dish with a small amount of water for 8 minutes, until tender.
Combine all ingredients except parmesan and paprika. Pour into crust. Sprinkle with parmesan and paprika.
Bake quiche at 350 for 45 minutes or until golden.
