Pulse to mix. Add butter or margarine and pulse until butter is cut into small pieces. Add water and pulse until mixture is crumbly, but don't allow it to come together in a ball. Remove from food processor and form into a ball. You can refrigerate for half an hour to make it easier to roll. Roll out dough in circular piece 1/4 inch (1/2 cm) thick on a lightly floured board. Place in a 9-inch pie plate; trim excess. Reserve some dough for a topping.
You can brush the crust with egg before filling to keep it from getting moist. Also, you can brush the top before baking (after filling) to give it a nice shine.

*To prebake, preheat oven to 400 degrees and bake for 10-12 minutes until golden.

Zucchini Quiche

pie crust dough (if you roll it thinly, 1/2 a recipe should be enough)
2 medium zucchini
2 eggs
1 cup grated kashkaval or white cheddar
250 grams cottage cheese
1/3 cup milk
1/2 tsp. salt
1/4 tsp. basil
1/4 tsp. oregano
pepper

2 T. parmesan
paprika

Preheat oven to 400 degrees. Leave for 10 min. Stir and leave for another five minutes. The yeast should be foamy. Mix flours in a large bowl, add yeast mixture and remaining ingredients, stirring to combine. Start with 7 cups of spelt flour and add more as necessary until the dough begins to come together. The dough should be soft, but kneadable. Turn out onto a floured surface and knead until it is a smooth cohesive dough. (About 10-15 min.)
Return dough to bowl, cover and let rise for about 1 1/2-2 hours until doubled in size. Punch down the dough and braid into loaves. Cover with a towel and allow to rise again until doubled. About another 1 - 1 1/2 hours. Brush with egg and sprinkle with sesame seeds.

Preheat oven to 350. Bake for 20-25 min. until lightly golden.

Enjoy!

* You can freeze the dough after you punch it down. Allow to thaw and reach room temperature, shape, and continue with the recipe.
** If desired, you can place the dough in the refrigerator overnight after kneading it. (If freezing for longer, you may have to defrost in the fridge for half an hour before scooping.)

Easy Spelt Olive Bread

Yields two loaves
Ingredients:

1 3/4 c. warm water
2 T. yeast
5 cups whole grain spelt flour
1/8 c. olive oil
1 cup green olives, sliced
1 T. salt

Combine yeast and warm water and let sit for 10 min.
